Nose: Dark chocolate, dried, fully ripe dark fruits (blackberry, plum), fresh ginger, light caramel. Finally sherry spice, a little oak, and coffee bean

Palate: Again the dark chocolate, fruity but also malty sweetness, distinct ginger, lightly burnt caramel. At the end, gentle, spicy oak Finish: Lively and fruity with sweet smoke.

Finish: medium-long, very warming, with lots of sweetness. A few drops of water open up the fruit aromas and sweetness noticeably, making the whisky more approachable and softer overall - but also somewhat less complex. The alcohol is certainly present as a flavor carrier, making the whisky powerful and massive, but it is very well integrated and not distracting.

Distilled in February 2017, bottled in January 2022 - at just under five years old, this whisky is one of the oldest Filey Bay has bottled so far. 295 bottles of 0.7 liters were bottled at original cask strength of 59.80% vol. - Naturally not chill-filtered and with no added coloring.

Spirit of Yorkshire Near the picturesque Filey Bay coast in the village of Humanby is the production site of the Spirit of Yorkshire distillery. Spirit of Yorkshire is the result of the successful collaboration between farmer Tom Mellor and business partner David Thompson. All the barley from sustainable cultivation using wind power, as well as the farm's own spring water for the whisky's unique character, come directly from the Wold Top Farm owned by Tom Mellor. The two business partners were supported and advised by the late renowned whisky expert Dr. Jim Swan, who helped build and advise several award-winning distilleries, including Kavalan in Taiwan, Penderyn in Wales, and the Speyside Distillery in Scotland. The gannet symbolizes the strong cultural connection to home that the whisky from Filey Bay is intended to reflect. As a bird rooted in its homeland, it stands for the company's values: fearlessness, precision, and grace. After all, the largest gannet colony on the British mainland is located not far from the distillery. In this way, the whiskey carries within it the spirit of the people and the place where it is created.
