The single cask matured for 10 years in Australia before aging for another two years in Europe.

Not chill-filtered, uncolored, bottled at cask strength, from near the city of Brisbane. For over 130 years, rum has been produced here from Australian molasses. The first rum distillery on the entire continent. The distillery relies on a copper pot still and on molasses from the country’s only family-run sugar mill.

Until a few years ago, Australia was a blank spot on the rum map, yet around 1800 rum was the second currency because there were not enough coins. However, the rum was imported, as it was not until more than half a century later, around 1860, that the first sugarcane fields were planted and in 1884 the first rum distillery (Beenleigh) was founded. More recently, however, some good bottlings from Down Under have appeared from independent bottlers. This molasses rum from a secret distillery was distilled in a pot still in 2007, first matured for 10 years in Australia, and then came to Europe from the end of 2017 onward.
