The rhum agricole was distilled from fresh sugarcane juice. Habitation Saint-Etienne in Le Gros Morne, Martinique is a listed historic monument. It was built on the La Maugée estate, which was still a large sugar refinery in the 19th century. The St. Etienne estate consists of the slave overseer's house, which rose above the distillery, and the workers' old huts, which is a euphemistic term that should only have become acceptable after the abolition of slavery. Distillation operations ended here as early as 1988, and since the mid-1990s the St. Etienne rums have been produced at Simon's distillery in the Le François District and then brought to St. Etienne for maturation. Bottling also still takes place at HSE.
