The rhum agricole was distilled from fresh sugarcane juice.
Habitation Saint-Etienne in Le Gros Morne, Martinique is a listed historic monument. It was built on the La Maugée estate, which was still a large sugar refinery in the 19th century. The St. Etienne estate consists of the overseer's house, which rose above the distillery, and the old workers' huts, a euphemistic term that should only have been used since the abolition of slavery. Distilling operations ended here in 1988, and since the mid-1990s the St. Etienne rums have been produced at Simon's distillery in the Le François district and then brought to St. Etienne for maturation. Bottling also takes place at HSE.
