Australia 2007 comes from a country that is very unusual for the rum market. However, Down Under has actually been producing rum for almost 150 years now - and at a very high level, as the limited edition of Plantation Australia 2007 proves. The complex rum is distilled using the pot still process, and very rare yeasts are used for fermentation. These include Schizosaccharomyces pombe, which is first fermented for 12 days, and Saccharomyces cerevisiae, which carries out a subsequent 3-day fermentation. Plantation Australia 2007 is produced at Beenleigh Artisan Distillery, the oldest licensed distillery in Australia. Rum has been produced at the distillery in Queensland since 1884. Beenleigh was founded by two Englishmen who bought a piece of land on the Albert River in 1864, grew sugar cane there and thus laid the foundation for later rum production.
