Nose: steamed peat smoke, orange peel, spicy fruit, dying embers. Vanilla sweetness, freshly sawn, spicy oak. 

Palate:  BBQ, pepper notes, balsamic acidity, sweetness, delicate spice. Cedarwood, leather, sherry casks 

Finish: Sherry, Torabhaig's peat and spice structure, harmonious balance


Torabhaig Distillery, based on the Scottish island of Skye, launches Torabhaig Cnoc Na Mòine. For number three in The Legacy Series, the distillery used Ex-Sherry Casks in part for the first time. Once again, heavily peated barley malt - phenol content 78 ppm - served as the foundation. After distillation, the single malt Scotch whisky was matured in Ex-Bourbon as well as Ex-Oloroso and Ex-Pedro Ximénez sherry casks made from American oak. There is no age statement. It was bottled at 46 percent alcohol, without chill filtration and without coloring.

The distillery's latest imprint from the Isle of Skye is a tribute to the Sleat peninsula. The label is adorned with artwork by local artist Ellis O'Connor. Isle of Skye, April 2025: Torabhaig, the single malt distillery of the Isle of Skye, presents "Sound of Sleat," the fourth chapter of its Legacy Series. Named after the narrow sea strait that runs beside the distillery, and sharing its name with the Sleat peninsula on which the distillery is located, "Sound of Sleat" continues the tradition of Torabhaig whiskies and evokes the atmospheric mist and rugged beauty of the misty island.  

Torabhaig Sound of Sleat is matured entirely in American oak (Quercus Alba) from new and former bourbon casks. This expression is characterized by citrus and spice notes, maritime saltiness, and rich smoke that recalls a beach campfire in spring. It showcases the elegant smoke for which the distillery is famous and brings to life the philosophy of "Smoke with Taste," which can be felt in every drop from the distillery.

The Sleat peninsula, known as the garden of Skye, is the island's southernmost peninsula, closest to the mainland and separated only by the Sound of Sleat. The region's rugged beauty is the home and creative muse of the distillery and shapes and inspires a whisky that is as complex and fascinating as the wild and rugged island itself.

Torabhaig embodies the beauty and craftsmanship of the island and is also introducing new labels created exclusively for the distillery by local artists. The first, for Sound of Sleat, was painted by Skye-based artist Ellis O'Connor, whose vibrant paintings celebrate the energy and movement of nature. Neil MacLeod Mathieson, whisky maker at Torabhaig, comments:

Our journey toward a 10-year-old whisky continues. For Sound of Sleat, we return to a classic Ex-Bourbon cask profile, refined by the spicy note of the new American oak casks, without losing the elegance and complexity our fans expect from a Torabhaig whisky. It offers plenty of oak spice, citrus notes, and maritime saltiness, paired with a newly discovered waxy note that we have identified during the maturation of our whisky. This whisky is a journey in itself as each wave of flavor flows through it.

"Sound of Sleat" is the latest vintage in the Torabhaig Legacy Series, a collection of single malts from the distillery on the Isle of Skye that traces Torabhaig's path to a 10-year-old whisky and the experimental steps toward establishing a future flagship that embodies the house style of well-tempered peat. 

Whisky lovers following the journey can now add a fifth whisky to their collection. Beginning with Torabhaig's first release, Torabhaig 2017, alongside Torabhaig Allt Gleann, Torabhaig Allt Glean Batch Strength, Torabhaig Cnoc Na Mòine, and now Torabhaig Sound of Sleat. Its home, The Distillery at Torabhaig, is so remarkable because it is only the second legal distillery ever to operate on the rocky, beautiful Isle of Skye - and the first new distillery to be built there in 190 years. Skye has shaped both the buildings that were to become the distillery and, in turn, the single malt, and both have a depth in their history and craftsmanship that sets us apart from others. Our aim for Torabhaig Single Malt is to change the course of whisky making on the island by giving it a splash of diversity, vibrancy, and unmistakable character. A true product of its surroundings and heritage, shaped by the wild landscape and harsh climate of the Isle of Skye. The building was first found as an abandoned but well-preserved farmstead that happened to be the perfect location for a distillery. The original buildings were built from stones taken from the nearby ruins of Camus Castle. A duty to preserve this history and bring the building back to life by creating something that is more than just a distillery. Over four years, the decaying buildings were painstakingly restored by hand, during which we uncovered even more history, including the remains of an old mill wheel, which we restored. It is now powered by the cool water from our stills. Now that we are fully operational and ready to bring our first single malt to market, we are proud to have created our own brand home with a true sense of place. Our persistence and attention to detail can now be devoted 100% to making whisky.

The new distillery aimed to express the true essence of Torabhaig. Through tireless experimentation and dialogue, as well as applying our experience to every batch, we have developed a distinctive style: our own flavor profile, which we call Well-Tempered Peat, well-balanced peat. Our team is devoted to producing whisky for the discerning customer who appreciates the depth of peated whisky. Every batch we bring to market is driven by the desire to delve deeper into the complexity of peat aroma in order to create a truly exceptional and balanced character.

"The Distillery at Torabhaig" is the second legally operated distillery on the picturesque Isle of Skye and the first new one to be built there in 190 years. The distillery, painstakingly built in Torabhaig, is undoubtedly a child of its surroundings. The aim of the restoration was to preserve the history of the original walls, which were built from the stones of the nearby Camus Castle ruins, and breathe new life into them. The result after four years of investment is more than a distillery - it is a home with history and tradition.
