Nose: Elegant, dry peat smoke, fruity character, influence from the Fino Sherry casks provides dry, smoked oak which balances with the smoke found in the heavily peated  malt.  sweet butterscotch

Finish:  Long-lasting well-considered finish combining the malty spirit of Kilchoman with the ripe citrus fruit profile provided by the Fino Sherry casks. A subtle peat smoke which has coated the palate right through now shares the finish with hints of dark chocolate.

Following the success of the first release of Kilchoman Fino Sherry Matured in 2020, the journey continued this year. For the 2023 Kilchoman Fino Sherry Cask Matured a total of 20 Fino Sherry Butts were hand-selected from Bodega Jose y Miguel Martin. With a combination of 20 Sherry Butts and a maturation period of at least five years, the malt develops a dry saltiness, with an influence of green, fresh fruit and the typically long-lasting, delicate Islay peat smoke.

Kilchoman Fino Sherry Matured was matured for at least five years in 20 Fino sherry casks previously hand-selected from Bodega Jose y Miguel Martin. Maturation in ex-Fino sherry casks gives the malt minerality, notes of oak and maple syrup, which combine beautifully with Kilchoman's natural citrus sweetness and maritime peat smoke.

Kilchoman Fino Sherry Matured is the limited bottling from Kilchoman. The malt was matured in Fino Sherry Butts previously used by Bodega Miguel Martin in Spain, from which the Glenfarclas distillery also sources its sherry casks. During its time in cask, the whisky has taken on the fresh green apple character of the Fino Butts and harmonizes wonderfully with Kilchoman's citrus sweetness, stewed fruits, and maritime peat smoke.
