Kilchoman Single Casks The visionary pursuit of the 100% Islay philosophy finds expression in this unique single cask collection. Shaped by the centuries-old tradition of "farm distilling," the endless possibilities of artisanal on-site processes, and outstanding cask management, Kilchoman's masterful diversity is revealed. Different cask types, vintages, and peat levels are presented at cask strength. Each cask is numbered I-V for the release, each bottle individually hand-numbered and provided with a short Distiller's Tasting Note. A special highlight is the 100% Islay PX Single Cask with aromas of dried fruits and dark chocolate, representing the classic Islay style of citrus notes and the floral note typical of Kilchoman. The whisky is lightly peated at 20ppm. Another special bottling is the Vintage Calvados Double Cask from 2011, typically peated for Kilchoman at 50ppm. Kilchoman is proud to be Scotland's only distillery to present a single malt made from its own grown and malted barley. The Uniquely Islay series gives Kilchoman the opportunity to experiment with exceptional cask types and showcase them. "So there are some really interesting cask types here which is something that we now specialize in a bit. We call them our Experimental Casks that we fill; all from different types of wine and spirits", explains Anthony Wills, Kilchoman Founder and MD.
