The rhum agricole was distilled from fresh sugarcane juice.
The Habitation Saint-Etienne in Le Gros Morne, Martinique is a listed historic monument. It was built on the La Maugée estate, which was still a large sugar refinery in the 19th century. The St. Etienne estate consists of the overseer's house, which stood above the distillery, and the old workers' huts, which is a euphemistic term that should only have become acceptable after the abolition of slavery. Distillation operations ended here in 1988, and since the mid-1990s the St. Etienne rums have been produced at Simon's distillery in the Le François district and then brought to St. Etienne for maturation. Bottling also still takes place at HSE.
