Don Papa Sherry Cask is a rum distilled from molasses using the column still process, initially aged for four years in ex-bourbon barrels made of American white oak before being finished for 18 months in four different types of Spanish sherry casks: Fino, Pedro Ximenez, Cream, and Palo Cortado.  The matured distillates from these four casks were then carefully blended together by the master blender to create a distinctive rum. It is bottled at a drinking strength of 45% vol.  Soft and fruity on the nose with nuances of raisins, this rum delights the palate with a full body and a delicate sweetness of plums, dark chocolate, and ripe figs. The long-lasting finish is characterized by its velvety flavor profile. The blended rum owes its complex flavor notes and texture to the combination of the different sherry casks, which give the spirit that special something.  This rare and strictly limited rum is presented in a striking new design that reflects both the island's Spanish past and preserves the legacy of Papa Isio. It pays tribute to the legendary islander, who was originally a worker on a sugarcane plantation and later rose to become a hero of the revolution in the fight for his homeland's independence.  Don Papa Rum is a premium Philippine rum from the island of Negros. To this day, Don Papa (Papa Isio) is considered one of the few well-known heroes of the Philippine Revolution. But before he joined the fight for the country's independence, he was a simple foreman on a sugarcane plantation. The memory of Don Papa's achievements in the revolution faded over time. But to this day, harvested sugarcane is a symbol of his veneration. Don Papa's energy and tireless fighting spirit are in every bottle of this exceptional rum. This rum is produced and distributed exclusively in small batches.
